Oat and Walnut Slice

Earlier this year, I added rolled oats and walnuts to my diet (I had considered them to be a bit too ‘healthy’ prior to that!).  I found my energy levels were increased and I didn’t feel I needed to snack mid-morning.  Thus, when I pondered making a slice with a healthy slant, the combination of rolled oats and walnuts came to mind.

Oat and Walnut Slice isn’t particularly sweet as it contains no refined sugar.  The sweetness is provided by just 2 tablespoons of honey and 1 tablespoon of golden syrup.

Hopefully you might find this slice to have an energising effect!

As with my Hazelnut Coffee Cake, my trustee work colleagues were my taste testers for this slice!  They are pretty good at providing useful feedback about taste and texture!

Ingredients:

  • 3 eggs
  • 1 teaspoon vanilla essence
  • 2 tablespoons milk
  • 1 teaspoon baking soda
  • 2 tablespoons honey
  • 1 tablespoon golden syrup
  • 1⅔ cups rolled oats
  • 1 cup ground walnuts

Method:

Pre-heat the oven to 180° C.  Line a 20cm square cake tin with baking paper.

Beat together the eggs and vanilla essence.

Dissolve the baking soda in the milk and add to the egg mixture.

Over a low heat, melt together the honey and golden syrup.  They do not need to reach a hot temperature and can be removed from the heat once they have melted.  Mix into the egg mixture.

Add the rolled oats and ground walnuts.  Mix to combine.  The raw mixture is moist but sticky.  It looks rather like brown porridge!

Raw Oat and Walnut Slice

Pour the mixture into the prepared tin and spread it evenly over the base.

Bake for 15 minutes.
